Baked Potato Soup

Ingredients

4 large baking potatoes, baked until soft
2/3 cup flour
6 cups milk, 2% milkfat
½ cup nonfat sour cream
½ teaspoon salt
½ teaspoon pepper
¾ cup shredded low fat cheddar cheese plus ¼ cup for garnish
½ cup bacon bits plus ¼ cup for garnish
½ cup chopped green onions plus ¼ cup for garnish

Directions

In a large dutch oven or heavy soup pot, whisk flour and milk until blended. Cook on medium heat until thickened, stirring occasionally, about 10 minutes. Meanwhile, scoop out the flesh from the baked potatoes. When the flour/milk mixture is thick, remove from the burner and add remaining ingredients except garnishes. Stir well, return to low heat and simmer for about 10 minutes. Once thoroughly heated, divide into 8 bowls and garnish with the remaining ingredients.
