Frozen Melon Treats (or Granita)

Ingredients

4 c. cubed ripe melon (suggest: orange honeydew or canteloupe)
1 c. unsweetened apple juice
1/4 c. lime juice
1 c. fresh blueberries
1 c. fresh raspberries

Directions

Combine melon, apple juice and lime juice in a blender; puree until smooth. Pour the mixture into BPA-free popsicle molds. Place on a level surface in your freezer and freeze until firm (at least 6 hours).

You can also make this a granita for desert by pouring the mixture in to a metal pan and placing on a level shelf in the freezer. Freeze, stirring and scraping the edges in to the center every 30 minutes until the slushy mixture is firm but not solid, 3 to 4 hours. Scoop in to in shallow bowls and top with fresh berries.
