Sweet Pea Mash

Ingredients

3-1/3 cups frozen peas (one pound)
3 tablespoons water
1/4 teaspoon salt (or salt substitute)
2/3 cup reduced-fat sour cream
1/4 teaspoon white pepper
1/4 cup minced scallion greens or chives
2 slices bacon, cooked and crumbled

Directions

Over medium-high heat, stir peas, water and salt for 6 to 10 minutes or until the peas are heated throughout. Place mixture in a food processor and add sour cream and pepper, pulsing until a chunky puree forms. Pulse in scallion greens or chives and bacon.

Simple & Healthy Recipe Substitutions

  • Use non-fat sour cream in place of reduced-fat sour cream
  • Substitute slivered almonds or low-fat turkey bacon for regular pork bacon
  • Replace salt with your favorite salt substitute herb
